   Summary: Wonderful addition to your Kitchen
Wow, that's all I could say when I opened up the package. This is the cookbook that everyone needs to have on their kitchen shelf. Flipping through this book made my mouth water.

The recipes are very diverse. Lots of delicious foods to make ranging from the complex (wedding cakes) to the simple (chocolate chip cookies). I love that there are notations for "Great for Beginner" recipes. They look like they're perfect for those who don't know their way around the kitchen. Everything is written out in complete detail with pictures for almost every recipe. This is a plus because I like seeing if what I make resembles what it's supposed to look like. There are little boxes throughout the book with extra tips for the baker that are extremely helpful. The ring bound format of the book is another plus as it is easier to handle the book. Also if you want to remove a recipe to copy or handle by itself, this format allows you to do with with ease.

The only negative I can say is that the dividers for each section are all grouped together in the back of the book. It looks like the reader has to take them out and place them in the different sections themselves. I don't understand why they couldn't have just been done during the final process.

Otherwise this is an excellent book to have in the kitchen. It's extremely sturdy and if the pages get dirty they can be cleaned with a simple wet wipe. I would love to have the other book in the series, The America's Test Kitchen Family Cookbook to add to my collection as well. For the price you pay and for the amount of recipes you get, this is a wonderful bargain and would make a wonderful gift for any kitchen.

   Summary: Another Comprehensive, Easy-to-Follow Cooking Reference for the Aspiring Baker
Baking requires a discipline that far more casual cooks like myself can find daunting, especially with the wealth of artisan bakeries in San Francisco for easy purchases. However, Christopher Kimball and his crew do such an effectively thorough job in targeting homeward American culinary hobbyists seeking the perfect recipe that it seems inevitable that they produce this companion to The America's Test Kitchen Family Cookbook. The depth of knowledge combined with the quirky nerd factor of the PBS series, America's Test Kitchen, comes across in this baking compendium as we follow the meticulous preparation of the show's appetizing, heavily tested recipes by their friendly test cooks. Just as overwhelming as its progenitor, this is a sturdy, five-ring binder of a cookbook, which helpfully allows you to take out the recipes you need without rifling through the whole volume. Once you purchase the book, it takes a while to unwrap the pages and organize the dividers, but it is a treasure trove for the scratch baker.

Over 700 recipes are separated into 22 sections. I have tried just a few of the beginner's recipes and can report they came out quite well thanks to their thoughtful techniques. For example, pancakes are truly enhanced by their tips to fold the whipped egg whites into the batter and making the pancakes smaller to allow them to rise higher. The peanut blossom cookies are better when you put the chocolate kiss in the center for the last two minutes of baking rather than waiting until they rest on the cooling tray. Less common but nonetheless curious delicacies are included like stromboli and napoleons. The Test Kitchen Tips, set off in yellow boxes, are invaluable in getting world-class results out of your baking. The At-a-Glance sections also provide helpful step-by-step directions on common tasks like making flaky, buttery pastry dough or decorating a wedding cake. The Getting Started chapter is a must to review before attempting any recipe presented here. It's hard to imagine a more comprehensive and thoughtful cooking resource on classic baking than this one.

   Summary: The ATK folks do it again
If you've never seen America's Test Kitchen, stop reading right now, go find your local PBS station listings, and make a note to catch it next week. Their modus operandi is simple--take a dish, find a jillion recipes, test them to find which ones are best, and then experiment to see if they can improve the dish even more. The magnum opus is The New Best Recipe, but they also have cookbooks for quick meals, restaurant classics, light cooking, etc. etc.

The ATK folks have another baking book besides this one (Baking Illustrated), which I own, so I thought I would compare the two. First of all, the physical format is different: BI is a standard, hardbound book--a rather large one, at 8.5 x 11 and over an inch and a half thick. The FBB, by contrast, is delivered in a hardbound five-ring binder, 9 x 10 and two inches thick. They thoughtfully packaged the contents in such a way as to keep them intact during shipping. You do have to insert the tab dividers yourself, but that's just a good excuse to get acquainted with the contents of the book. :-) The pages are printed on glossy paper of a decent weight. The five-ring punch makes it unlikely that these will tear out under normal use, and it stays open more easily than the BI book.

The next difference is the style. BI follows the style of the New Best Recipe--that is, there may be up to a page or more talking about what they tried and the special features of any given recipe before you actually get to the recipe. The potential pitfalls of a recipe or the tricks that make it extra special, all are covered in the "article" before the recipe. The FBB, on the other hand, cuts to the chase. Recipe follows recipe with no exposition. Myself, I really enjoy reading the "article"--if you're in a hurry, you can always skip it, right? The FBB does have sections on baking basics and bakeware, so even if you're a rank beginner, there is hope for you. High-altitude bakers get a page of troubleshooting advice, and there are equivalents and conversions.

Recipes? Both books cover both sweet and savory baking: breads and rolls as well as cookies, cakes, and pies. The FBB has several recipes that were developed since BI was published, and here's its real edge--they include several must-haves that were developed in the test kitchens since BI was published:

- the best blueberry scone recipe on the face of the earth
- an incredible pie crust that is super easy to roll out and yet bakes up ultra-flaky (secret ingredient: vodka!)
- simple drop biscuits that are easy to make and fabulous to eat
- brown-sugar cookies made with browned butter (beurre noisette) that are scrumptious
- and the fabulous improvement on the famous no-knead bread, "Almost No-Knead Bread"--generally agreed to be just as easy but to taste even better than the original

Alas, like all the ATK books, if you have one, you'll find recycled recipes in the other... it looks to me like about two-thirds of the recipes in BI are in FBB as well. Even so, I found that the new inclusions in the FBB to be worth it. And the recycled recipes are best of class.

So... Two (floury) thumbs up from The Baker of the family for the ATK Family Baking Book!

   Summary: Excellent all around!
I'm quite impressed with the Family Baking Book. I love the 3 ring binder format. The cover is rather heavy, laminated and sturdy enough to stand up to flour and egg splattering.

The content is top notch. I can see this being my next go-to cookbook for all things baking related. You will find plenty of illustrations and explanations covering every step. There are suggestions and advice for bakeware, ingredients, etc. So far, the recipes I've tried have been great.

Everything from cakes and cookies to pizzas and stromboli are here. The pizza dough recipe was so great that it may actually replace my old standby that I've been using successfully for years.

One thing you won't find here is much in the way of "healthy" baking. America's Test Kitchens have a great love of unsalted butter in all things, it seems. There is a chapter on "Light Baking" towards the back. But the majority of the book features rich, melt in your mouth creations.

I would absolutely recommend this as a wedding gift, or gift for anyone, really, whether newbie or experienced cook. I now want to try the other America's Test kitchen books!

   Summary: Can't put it down!
I got this book as soon as it came out (already had the ATK Family Cookbook and loved that one too) and I have not been able to put it down since. There is so much useful information in it that even when I am not using it to bake something, I just sit and read it and soak it all in. The product recommendations are great, as well as the information about standard baking ingredients. There are many many useful pictures and helpful tips scattered throughout the book. This book makes me feel like I can bake anything-- I'm even tempted to try out the wedding cake sometime! The only con is that I'm now obsessed with baking and I don't know what to do with all the yummy treats I'm making! I would consider myself an intermediate baker, but whether you are a beginner or very advanced I think that this book would be great for you and every skill level in between.
