   Summary: Baking Illustrated
For a beginning baker as I am, the numerous illustrations throughout the baking steps have become a necesity. There are varying levels of difficulty and it's nice to chose your own pace. There is also a great variety of recipes sure to please a wide range audience.

   Summary: My favorite baking book by far!
For cooking, my favorite cookbook is The Joy of Cooking. Now I have found a matching volume for my baking. I absolutely love that all aspects of these recipes are tested...there are very detailed descriptions of why each ingredient and each procedure is included. I love my cookbooks with pictures, and this one doesn't have many, but as far as actual information and stable recipes...this book beats them all. If you need to add some confidence to your baking pick up this book.

   Summary: Baking Illustarted
Absolutely wonderful book. It gives you the answers to questions that you need to know. I realised that these people went through a lot of trouble, time and especially patience to bring you the recipe that's "just right". Simply put together without too much fuss and fluff.
Worth every penny and a perfect gift for anyone especially yourself.

   Summary: Basic Baking 101, 201, and just a swatch of baking grad school
Well, here's what goes down. There are baking books, and there are books on how to bake. This is the latter to a great degree -- the recipes almost take a back seat to the extensive discussions on technique that make a Cooks Illustrated book what it is. And it lives up to the "illustrated" moniker too -- technique illustrations are everywhere.

This book does come up short in a few areas. The bread sections have no coverage of sourdough, for example, a peculiar oversight that would seem to require a second edition. Information on ingredients isn't hard to find in the index, but it is scattered throughout the book, something that gives its closest competition, The King Arthur Flour Baker's Companion, a bit of an edge in that regard. And the everpresent issue of Cooks Illustrated overlap does obtain here. But this remains a top-notch baking book and required reading for anyone who wants a recipe that works. If in doubt, buy both this and the King Arthur book together -- you won't regret either one.

   Summary: Big 5 Star Dittoes
This won't be a long review. I only wish to say that of the 15 or so recipes I've made so far, all 15 have been complete successes. I attribute this to their excruciatingly detailed instructions (many with step by step photos for difficult techniques) and the science behind the recipes. Even so, the recipes are very easy to follow.

I've made several of the yeast breads, the cinnamon rolls, breakfast pastry, pizza dough, numerous cookies, and FINALLY, pie crust (which in 30 years of baking I'd NEVER been able to make an "excellent" crust, always mediocre). It's a keeper, and one of the two cookbooks I keep on my kitchen counter next to my Kitchen Aid Ultra Power :)
